Tender young nettles have long been considered the perfect spring green; she's filled with more vitamins and minerals than almost any other plant, and therefore makes an excellent tonic food for the transition into spring. She builds us up, gets our blood flowing, and fills us with energy. The young plant can be sauteed, made into a pesto, or dried and then steeped to make a nourishing herbal infusion.
